Crespells recipe

These rich cookies, called Crespells, are typical of the island of Mallorca, where it is common to find them in bakeries and pastries, especially during Holy Week. They can have different forms: stars, fish, flowers, hearts, animals, among others. Ingredients to make crespells:
100 grams of sugar (½ cup)
100 grams of pig butter (at room temperature)
275 grams of wheat flour
35 grams of sunflower oil
35 grams of juice of an orange
2 egg yolks
3 tablespoons Glass sugar soperas (to decorate)
1 piece of zest of a lemon

Ingredients to make crespells:

1. Take out the lard to be at room temperature. The lemon peel and squeeze the orange juice.





2. See all the ingredients in a container. Start with liquids and end with flour. Go stirring all the time to integrate well. You can use a silicone tongue or a fork. You can save the whites that surface and take advantage of them to make a ham and cheese tortilla or to mount them ready for a spongy cake.





3. Once you get a malleable dough, you can already knead the mass of the crespells with your hands. You will be ready for it when you see that it is handled very easily without sticking to the walls of the container. Sprinkle a little flour on the kitchen bench and work the dough for about three minutes.



Trick: Preheat the oven at 180 ºC for 10 minutes to save time before baking.





4. flattened the mass of the Mallorcan cookies on a sulphurized paper or baking paper. Help yourself with a roller, but do not crush the dough too much, remember that it has to have an approximate thickness of 1 centimeter, because that will also favor the cookie to be easier to drive without breaking. 5. A good amount has come out! Enter the tray into the central part of the oven with a temperature of 180 ºC for about 25 minutes with heat up and down. You will observe that the tips are slightly brown, that is the idea. If you see that they are browning too much, the oven temperature goes down a bit.





6. When they are ready, let them rest with the oven open a couple of minutes before removing them. Deposit the crespells in a grid so that they air and do not moisten with the steam. When they have cooled completely, sprinkle icing sugar on top.
