Campestre Chicken Recipe

Clean and wash the chicken, dry it, spray it with half of the lemon juice, splash it and leave it at rest outside the fridge, but in a fresh and little ventilated place.

Ingredients to make country chicken:
4 250 grs chicken thighs. c/u approx.
The juice of a lemon
100 grs. of bacon cut in no more than 4 slits
2 cloves of garlic
1 laurel leaf
1/2 cup of chicken broth
75 grs. of green olives without bone
200 grs. of mushrooms
200 grs. of natural tomatoes crushed
1/2 cup of brandy
salt
pepper white to taste
sugar

Ingredients to make country chicken:

2. Pica El Bacon, not very finely and skip it in a casserole until it is very golden, retir it with a sparkling and in the same background the chicken, add 2 masked garlic cloves, the laurel and spray with the broth.

3. Cover the casserole and put it in a moderate oven for 30 minutes.

4. In the meantime whiten the olives passing them momentarily through boiling water, clean the mushrooms and rinse them in water acidulated with the rest of the ingredients.

5. It dries well both and add them with the crushed tomato in the casserole.

6. Salpimenta and turn 1 teaspoon of sugar to counteract the acid of the tomato.

7. Return to the oven at moderate temperature the casserole uncovered for additional 20 minutes.

8. Then remove the casserole, sprinkle the chicken with the brandy, continue fire and let the flame go out by itself.

9. Serve it with mushrooms and olives as garrison.
