Lobster boiler recipe with potatoes

The lobster boiler is a dish of Spanish cuisine, typical of Mallorca. Although the original recipe has only seafood, in recipesgratis we present a variant that includes some potatoes to give more consistency to the dish. Starting with a good base stir, seafood of quality and flambado with brandy, this lobster boiler with potatoes is a delight, a dish that is not to prepare every day, but to give a pleasure and share a family table.

Ingredients to make lobster boiler with potatoes:
2 kilograms of lobster
4 red gambas
1 liter of fish broth
4 slices of village bread
1 onion
4 potatoes
4 ñoras or peppers choriceros
4 mature tomatoes
1 handful of roasted almonds

1 jet of olive oil
1 pinch of salt and pepper
1 branch of parsley
1 jet of brandy
1 laurel leaf

Ingredients to make lobster boiler with potatoes:

1. To cook our lobster boiler we will need a boiler or a clay casserole, if you do not have, you can use a low cut pot. It gathers all the ingredients and itch all vegetables. Lave the prawns very well (you can leave them with their heads) and part the lobster in medallions. Collect the ñoras soak so that you soften and can remove all the pulp that is what we will use. If you do not have this ingredient, you can replace it with a little sweet paprika powder.

2. Hot the oil in the casserole and make a garlic and onion sofrit. When the onion begins to get transparent, incorporate seafood, prawns and lobster, and sauté the set over low heat.

3. Next, add the pulp of the ñoras along with the laurel. Remove everything so that flavors are distributed and continue with cooking for one more minute.

4. After this time, we remove the cracks from the casserole and crush them in the blender until you get a fine cream. Crush this cream again with almonds, garlic, parsley, spicy paprika and a piece of potato. Then go through a strainer and this will be our minced for the lobster boiler. Reserve.

5. Returning to the casserole, we add the brandy, the fennel and the fish broth along with the chopped potatoes. We make a flambado to burn the brandy alcohol and keep cooking over low heat for about 15 minutes until the potatoes are soft.

6. Two minutes before the lobster boiler is ready, we add the mince we had reserve and let the sauce be linked with all the content of the casserole.

7. To serve this great lobster boiler with potatoes, place the casserole in the center of the table and put to each diner some slices of bread pagés or bread of town. A good benefit! And if you prefer to try this dish without lobster, you can also make a fish boiler or a lamb boiler, delicious and little cheaper dishes.
